Easy Frozen Burrito Casserole (5 ingredients)

My frozen burrito casserole recipe starts with store-bought burritos, but with its delicious sauce and gooey melted cheddar cheese topping, no one will know it's a shortcut recipe! Using this frozen burrito hack is super easy, but this meal is so tasty it will actually become a family favorite!

What you need to make Frozen Burrito Casserole

Ingredients for frozen burrito casserole: frozen burritos, condensed cream of mushroom soup, milk, green chilies, and shredded cheddar cheese.

Because it is easy to prepare and only uses 5 ingredients that are easily kept on-hand, Frozen Burrito Casserole makes a great "crisis meal" for when you are tempted to run through the drive-thru. It is a deliciously easy way to make frozen burritos taste better. I like to keep ingredients on hand - I always have milk and cheese, so if I make sure to have frozen burritos, cream of mushroom soup, and green chilis in the pantry and freezer, I know I can put this together easily on a night when I am out of ideas and energy.

Frozen bean burritos are the time-saving basis for this easy casserole, but you can switch that up if you prefer a different burrito filling. I like the way the bean filling tastes with the creamy gravy, so I always use bean burritos.

  • Frozen burritos. I like El Monterrey bean burritos, but you could use a different brand or substitute ground beef and bean or your favorite burrito flavor. Chimichangas work too. Try it with breakfast burritos for a hearty start to the day! 
  • Condensed cream of mushroom soup. Cream of mushroom goes really well with the green chilies, but cream of chicken would also be delicious.
  • Diced green chilis. You can use spicy or mild green chilies, or swap things up with a can of tomatoes and green chilies (like Rotel).
  • Milk.
  • Shredded cheddar cheese. Mexican cheese blend also works well—you can use whatever you have on hand.
  • Non-stick cooking spray.

You'll need the following equipment to make the burrito casserole:

  • 9x12 inch casserole dish
  • medium bowl
  • large spoon for mixing and spreading sauce
  • foil to cover frozen burrito casserole while baking

How to make Frozen Burrito Casserole

Making this Tex-Mex casserole is super easy!

Spray a 9 x 13 inch baking pan with nonstick cooking spray and place the frozen burritos in the baking dish in a single layer (1). In a medium bowl, combine the soup, milk, and green chiles (2), mixing well, then pour the soup mixture over the burritos.

Sprinkle with shredded cheese on top of the burritos, covering all areas (3). Cover and seal with aluminum foil (4) and bake in a preheated 375ºF oven for 35-45 minutes.

Substitutions and Variations

This is an easy dish to use what you have on hand:

  • Burritos - instead of bean burritos, try beef and bean, chicken, or cheese burritos (or even a chimichanga variety like Spicy Jalapeño Bean & Cheese Chimichangas), or try it for breakfast with breakfast burritos
  • Sauce base - although this burrito casserole uses a creamy sauce, you can use a red or green enchilada sauce mixture in place of the soup and milk (I like adding cumin and garlic salt to the green or red enchilada sauce); you could also swap out a different cream soup such as cream of chicken soup or cream of celery soup
  • Sauce additions - try adding black olives, tomatoes (or substitute a can of tomatoes and green chilis for the can of green chilis) or black beans to the sauce
  • Cheese - try shredded Monterey Jack cheese with peppers, Mexican blend cheese, or quesadilla cheese in place of cheddar
  • Toppings - for variety, you could garnish with salsa, pico de gallo, sour cream, and/or fresh chopped cilantro or green onions

Storage

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.

FAQ

What kind of burritos should I use?

I like El Monterey bean burritos because the size is nice and we like the flavor, but you can substitute any frozen burrito or chimichanga brand (or even try different varieties like beef or chicken). If you substitute, try to keep the total weight of the frozen burritos about the same (32 ounces) so the sauce will be the correct amount for the dish.

Do I have to use cheddar cheese?

Nope! Feel free to substitute your favorite melting cheese (quesadilla cheese is one of my favorite white melting cheeses).

Do I have to cover it while baking?

Covering the dish is what makes the casserole tender and full of rich sauce. If you prefer, you can remove the foil about 10 minutes before the end of cooking time to brown the cheese.

What to serve with it

I like to serve Frozen Burrito Casserole with any of these sides:

  • Green salad
  • Tex-Mex Cole Slaw
  • Restaurant-Style Mexican Rice or Spanish rice
  • Slow-cooked green beans
  • Mexican corn

Ingredients
  

  • 8 frozen bean burritos, 32 ounces
  • 10.5 ounces condensed cream of mushroom soup
  • 5 ounces milk, about ½ soup can
  • 4 ounces diced green chilies (drained)
  • 2 cups shredded cheddar cheese
  • non-stick cooking spray

Instructions

  • Spray a 9 x 13 inch baking dish with non-stick cooking spray. Place 8 frozen bean burritos in the baking dish.
  • Combine 10.5 ounces condensed cream of mushroom soup, 5 ounces milk, and 4 ounces diced green chilies (drained) in a bowl. Mix well and pour over the burritos.
  • Top burritos and soup mixture with 2 cups shredded cheddar cheese.
  • Cover dish with aluminum foil and seal edges.
  • Bake at 375°F for 35-40 minutes or until heated though and cheese is melted.

Notes

Substitute any kind of burritos that you think would be good, and feel free to change the flavor of the cream soup (cream of chicken with chicken enchiladas, for example).

    We made a bunch of homemade burritos, and froze a lot of left-overs. This recipe is just delicious! I'm heating up the last of our leftover burritos in the casserole, and am already talking to my husband about making more to freeze because this is such an easy and delicious week-night meal. Truly restaurant quality.
