Shrimp and Grits

Grits with shrimp sounded like some northern twist on a sacred southern staple when I first heard about it, but I can honestly say that this is one of my all time favorite dishes. I have to admit that I am guilty of throwing in more than the 2 ounces of cheddar that the recipe calls for, but where cheese is concerned more is almost always better. Enjoy!

Black Bean Soup

Black beans are one of my favorite beans - they go well with corn and tomatoes in cold salads as well as hot sides, but the king of all black bean recipes is black bean soup. For this recipe, I prefer using prepared dry beans because they are more tender than the canned beans and it's easier to get the right consistency for soup. If you like this soup, try a similar mixture without the broth to make a thick bean dip for corn chips.

Southwestern Hamburger Skillet

This southwestern style stovetop recipe from the Frugal Mom Menu is a quick and easy way to use up leftovers and canned ingredients that you have on hand. If your family likes spicier flavors, substitute enchilada sauce for the tomato soup and add a can of green chilies or tomatoes with green chilies. Other additions that work well are corn and black olives. Although the recipe calls for kidney beans, black beans or red beans can be substituted.

Burritos Mojados

Burritos are flour tortillas wrapped around meat and/or beans. Burrito means "little donkey" in Spanish, possibly because burritos resemble the appearance of the bedrolls and rolled packs that donkeys carry. Mojado means "wet" in Spanish. Burritos without sauce are simply called burritos, but burritos with sauce are called burritos mojados, or wet burritos. This recipe calls for our homemade enchilada sauce, which is quick and easy and is less expensive than canned enchilada sauce.
