Sometimes, the best recipes are the simplest, and that is true with this grilled zucchini recipe. When summer rolls around and zucchini is in abundance, this quick and easy recipe is my go-to for an easy side dish. With just two ingredientsโ€”fresh zucchini and a sprinkle of seasoned saltโ€”you can create a side dish that's smoky, savory, and packed with natural flavor. Plus... there are no pans to wash, and it's ready in 10-15 minutes.

When zucchini plants start producing, home gardeners find themselves with an over abundance of zucchini to share. Grilling zucchini is a quick and easy way to put the nutritious, flavorful vegetable on the table.

What you need to make Grilled Zucchini

  • zucchini
  • seasoned salt

That's it! Just two ingredients.

How to make Grilled Zucchini

Grilled zucchini is super simple! Just slice your zucchini (1), sprinkle with seasoned salt (2), and grill (3). There is no set time, just watch it as it cooks. When it is tender and starting to brown (4), it is done.

Make it your own

You can mix in yellow summer squash if you'd like, and the seasoned salt can be swapped for a salt-free seasoning, simple salt and pepper, or your preferred combination of herbs (Italian seasonings work well).

Storage and freezing

Store in an airtight container in the refrigerator for up to 4 days. You can freeze grilled zucchini for up to 4 months.

Ingredients
  

  • 3 zucchini
  • 1-2 teaspoons seasoned salt, as preferred
Prevent your screen from going dark

Instructions

  • Preheat grill to about 400ยบF.
  • Slice 3 zucchini and discard ends.
  • Sprinkle zucchini with 1-2 teaspoons seasoned salt.
  • Grill for 5-10 minutes or until zucchini is tender and starts to brown.
