Baked Potato Soup

Baked potato soup topped with shredded cheddar cheese and chopped bacon.

Baked Potato Soup is one of our most requested recipes - it's creamy and rich with the perfect balance of flavors. It's a good way to use planned leftovers as well; have baked potatoes during the week and simmer a pot of this satisfying soup on the weekend.

Pumpkin Trifle

Image of layers of pumpkin filling, crushed gingersnaps, crumbled gingerbread, and whipped cream in a trifle bowl

This beautiful dessert is almost as much fun to look at as it is to eat. With gingerbread, pumpkin, gingersnaps, and pudding, you know it is going to be good.

Chipped Beef Gravy

Chipped Beef Gravy and Biscuits on a white plate

We love to have breakfast for dinner at our house, and one of our favorites is biscuits and gravy. This creamy chipped beef gravy is delicious over homemade buttermilk biscuits or soft rolls, or you can serve it over toast.

3 Ingredient Buttermilk Biscuits

Biscuit cut in half with butter on one half and fruit preserves on the other half on a yellow and white plate

These 3 ingredient buttermilk biscuits from scratch yield consistent, delicious results. This large batch makes enough to freeze half either before or after cooking. Freezing them before cooking makes it easy to have fresh, hot biscuits for breakfast, but if you cook them first, you can make your own breakfast biscuit sandwiches for the freezer instead of buying them already prepared.

Homemade Apple Pie

Slice of apple pie with top crust and a scoop of vanilla ice cream with a fork

Pastries are my weakness. Luckily, I had a houseful of teenagers that devoured this pie and saved me from the mental anguish of trying to avoid it after the first slice. This pie uses our bulk pie crust recipe, which makes 6 crusts for the freezer. I took 2 crusts out to thaw the morning I made the pie and by afternoon they were thawed and ready to go. You can use any fresh fruit in this recipe, just be sure to omit the cinnamon if you are not using apples, peaches, or another fruit that goes well with cinnamon.

Easy Orecchiette Florentine

Red square bowl with orecchiette pasta, sliced onion, chopped bacon, roasted bell peppers, cooked spinach, and Alfredo sauce.

Tonight's dinner was supposed to be Chicken Marsala but alas, my distracted nature had me running all over the grocery store for items needed for a science experiment and I didn't realize until I got home that I forgot to get the mushrooms I needed. I didn't want to head back to the store so I decided to figure something out using what I had on hand: pasta, a jar of roasted red peppers, grilled and chopped chicken in the freezer, an onion, some bacon, a jar of Alfredo sauce, and a bag of baby spinach that I had planned to use in a salad. Everyone loved the easy 15 minute meal, and the name was voted to be Orecchiette Florentine. Doesn't it look yummy?

Chicken with Basil Cream Sauce

breaded cooked chicken breast smothered in a cream sauce with basil and red peppers

This rich and creamy chicken dish is one of the recipes first featured in our meal plans. The pimentos and fresh basil are the perfect seasoning in the delicious cream sauce served over breaded and sautéed chicken breasts.

Cheddary Chicken and Broccoli

Puff Pastry with broccoli, chicken, and shredded cheddar cheese on a white plate

This is my favorite go-to recipe when I have no time or inspiration but I do have all of the ingredients (which are all either shelf- or freezer- stable so I try to keep them on hand at all times). In addition to making you look like you spent lots of time in the kitchen, it tastes delicious. Unfortunately, everyone loves it so much that even if I double the recipe there are only enough leftovers for my husband to take for lunch the next day! It goes well with a salad or fresh fruit on the side.

Festive 4th of July Flag Cake

Fluffy white whipped cream mix over crumbled angel food cake topped with blueberies and cherry pie filling in the design of an American flag in a 9x12 glass pan

This festive 4th of July Flag Cake is deliciously light and creamy. Featuring Angel Food Cake and a whipped cream cheese filling, it is the perfect summer dessert for an Independence Day meal.

Tomato and Squash Casserole

Baked layered casserole of yellow squash, zucchini, and tomatoes with herbs and cheese in a baking dish with a serving removed.

With our squash harvest starting to come in, I wanted to try some new veggie dishes. This delicious tomato and squash dish with an Italian flavor is adapted from a recipe that I saw in the Costco Connection magazine. I'll be glad when our Roma tomatoes start producing - the Romas we bought to use in this recipe were over a dollar each! Later in the summer when we can get all of the vegetables and herbs from our garden, I will definitely be making this again.
