Delicious Greek chicken is a great way to have a meal, make chicken stock, and use the stock and leftover chicken in planned leftover dishes.

We have always made this wonderfully tender chicken in the crockpot, but it can also be made in the air fryer for a more roasted result.
Prepare the Chicken and Greek Dressing
For both versions, rinse the chicken and pat dry. Cut the lemon, squeezing the juice into a small bowl. To make the dressing, add the oil, rosemary, and garlic to the lemon juice. Set aside. Prepare the chicken by placing the lemon pieces into the chicken cavity. To cook, use the instructions for your preferred method below.
Crockpot Greek Chicken Instructions
Prepare the chicken as directed. Lightly spray slow cooker with non-stick cooking spray, and place the prepared chicken in the slow cooker. Brush the lemon dressing over the entire chicken and sprinkle with salt and pepper.
Cover and cook on low for 6 hours or until internal chicken temperature reaches 165ยฐF.
Remove chicken from slow cooker onto serving platter; allow to sit for 5 minutes before slicing.
Air Fryer Greek Chicken Instructions
Prepare the chicken as directed. You'll need to rush the lemon dressing over the entire chicken and sprinkle with salt and pepper, so depending on the model of your air fryer you may need to do that before putting it in the basket, but if possible put the chicken in the basket and then brush it with the dressing (it's less messy that way).
Spray the fry basket with cooking spray and place chicken into the basket with the legs facing down.
Air fry chicken at 330 degrees for 30 minutes. Flip chicken. Continue cooking for 20 more minutes (or more as needed based on the size of your chicken) at 330 degrees Fahrenheit or until internal temperature of chicken is 165 degrees.

- 5 pound whole roasting chicken
- 2 tablespoons olive oil
- 2 tablespoons fresh rosemary (or 2 teaspoonsย dried)
- 3 teaspoons garlic
- 1 lemon
- 1 teaspoon salt
- ยฝ teaspoon pepper
