    Poppy Seed Chicken Casserole is one of those recipes that falls into the category of "never underestimate a cook with some chicken and a can of cream of chicken soup." It's a creamy and delicious classic casserole that uses the popular combination of cream of chicken soup and sour cream and is topped with a Ritz cracker and butter mixture. In this instance, I'm serving it along with Microwave Acorn Squash and another classic, Seasoned Green Beans.

    Because we use the Secrets of a Busy Cook, our chicken is already cooked, making this a quick prep recipe. Bulk cooking ingredients saves time and money! Take out your frozen chicken and thaw it. If you don't keep cooked chicken in your freezer, go ahead and cook and chop 1 lb. of chicken.

    While you are waiting for your chicken to thaw, if you enjoy wine, pour yourself a glass. Yes, my chicken and my wine come from Costco. (I see you raising your eyebrows, but Costco wine is really good - try it sometime.) I love Costco. In case you are wondering, that little gadget is a wine aerator and it rocks. Wine aerators provide instant aging for people who can't stand to wait (like me).

    Here is the rest of what you need:cooked chicken, sour cream in a measuring cup, a stick of butter, 2 sleeves crackers, cream of chicken soup, a jar of poppy seeds

    In a medium bowl, combine the soups and sour cream, then mix in the thawed cooked chicken.

    Add a tablespoon of poppy seeds and mix.

    Add a sleeve of crushed crackers and mix.

    Spread into a 9x13 pan.

    Crush another sleeve of crackers.

    Melt 2 tablespoons of butter and mix with the crushed sleeve of crackers.

    Spread buttered crackers onto chicken mixture and sprinkle with poppy seeds for garnish.

    Bake at 325° for 25 minutes.

    Like most casseroles, Poppy Seed Chicken Casserole is best served with simple sides like salad, steamed broccoli, buttered peas, or sautéed or roasted vegetables. The creamy sauce means that plain rice is a perfect accompaniment.

    This beloved southern favorite is creamy and delicious, and when you have cooked chicken on hand (which you will if you are following the Secrets of a Busy Cook!) it’s easy to make.

    Ingredients
      

    Filling

    • 2 cups cooked chicken, from freezer or 1 lb. chicken breasts, chopped and sautéed
    • 20 oz condensed cream of chicken soup
    • ½ cup light sour cream
    • 1 sleeve round buttery crackers, crushed
    • 1 Tbsp. poppy seeds

    Topping

    • 1 sleeve round buttery crackers, crushed
    • 2 Tbsp. butter, melted
    • poppy seeds for garnish
    Prevent your screen from going dark

    Instructions

    • Combine chicken, soups, sour cream, 1 sleeve crackers, and 1 Tbsp. poppy seeds in a large bowl. Mix well and transfer to a greased casserole dish.
    • Mix together remaining crackers and melted butter and sprinkle on top. Garnish with poppy seeds.
    • Bake at 325°F for 25 minutes.

      YUM. Poppyseed Chicken is a family favorite at our house. I make it exactly like yours, with one tiny change - I use cream cheese instead of sour cream. It is SO GOOD. :)
