Asian Chicken Salad
Full of rich Asian flavors, Asian Chicken Salad is a perfect planned leftover recipe using Grilled Sesame Chicken or rotisserie chicken.
Ingredients
- 2 cups Prepared Sesame Chicken, or other leftover cooked chicken
- 4 cups salad greens
- 2 celery stalks
- 2 carrots
- ½ cup green onions
- 10 ounces cherry tomatoes
- 2 radishes
- 1 cup Mandarin oranges
- 1 tablespoon toasted sesame seeds
- 4 teaspoons sliced almonds
Salad Dressing
- ¾ cup olive oil
- ⅓ cup rice vinegar or apple cider vinegar
- ½ cup soy sauce
- 3 tablespoons honey
- ¼ cup water
- 3 cloves garlic
- 2 teaspoons ground ginger
Instructions
Homemade Asian Salad Dressing
- Slice or crush 3 cloves garlic.
- Using an immersion blender or regular blender, blend to emulsify ¾ cup olive oil, ⅓ cup rice vinegar or apple cider vinegar, ½ cup soy sauce, 3 tablespoons honey, ¼ cup water, 3 cloves garlic, and 2 teaspoons ground ginger.
Salad
- Chop 4 cups salad greens, 2 celery stalks, 2 carrots, and ½ cup green onions, slice 2 radishesand halve 10 ounces cherry tomatoes.
- Slice 2 cups Prepared Sesame Chicken.
- Drain 1 cup Mandarin oranges.
- In a large bowl, combine salad greens, celery, carrots, onions, tomatoes, and 1 cup Mandarin oranges; toss well. Layer sliced, cooked chicken over salad. Sprinkle with 1 tablespoon toasted sesame seeds. Serve with Homemade Asian Salad Dressing. Garnish with 4 teaspoons sliced almonds if desired.
Notes
Store leftover salad dressing covered in the refrigerator.
