    Glazed Meatloaf

    ⏲️ Time needed

    Meatloaf takes a little over an hour to cook, and the prep is about 15 minutes. Allow a total of an hour and 25 minutes or so from start to finish (unless you need to add time to thaw the ground beef).

    🥘 Ingredients

    • ketchup
    • brown sugar
    • lemon juice
    • mustard powder
    • ground beef
    • 3 slices of bread
    • dry minced onion
    • 1 egg
    • Cajun seasoning

    📋 Instructions

    While the oven is preheating, combine the ketchup, brown sugar, mustard powder, and ¼ of the lemon juice in a small bowl to make the glaze.

    In a large bowl, mix the ground beef, bread, onion, egg, Cajun seasoning, the remaining lemon juice, and ⅓ of the ketchup mixture. Bake in a loaf pan for 1 hour, drain off the fat, then spread the remaining glaze mixture evenly over the top. Bake for 5-10 more minutes.

    ❄️ Freezer instructions

    You can prepare this meatloaf for the freezer:

    1. Prepare as raw meatloaf mixture as directed and form into a loaf.
    2. Line a loaf pan with foil or freezer paper, then form the loaf to the pan.
    3. Freeze loaf without cooking, reserving ⅔ of the ketchup mixture. Freeze the ketchup mixture in a small container that can be placed with the frozen meatloaf. When meatloaf is frozen, remove from the loaf pan using the foil or freezer paper as leverage. Wrap for the freezer with the extra glaze and label with:
      "Glazed Meatloaf: Thaw and bake for 1 hour at 350ºF. Drain fat and spread glaze over top of meatloaf. Bake 5-10 more minutes."

    Ingredients
      

    • ½ C ketchup

    • 1 Tbsp. dry minced onion, or to taste
    • 1 egg, beaten
    • 1-½ tsp. Cajun seasoning, or to taste

    • Heat oven to 350°.
    • In a small bowl combine ketchup, brown sugar, 1 tablespoon of the lemon juice, and mustard powder.
    • In a large bowl combine ground beef, bread, remaining lemon juice, onion, egg, seasoning and ⅓ of the ketchup mixture. Mix well and place in a loaf pan.
    • Bake for 1 hour, drain any fat off, then spread remaining ketchup mixture evenly over the top. Bake for 5-10 more minutes, then serve.

    Notes

      I'm not a big fan of meatloaf, so I was hesitant to try this recipe, but I was looking for something different to add to our menu.It's definitely something different than we usually eat, and M4M recipes are usually spot on with the seasonings and a lot of flavor, so I thought it was worth a shot. This was so easy and so delicious. I had all the pantry ingredients already on hand. I did leave the bread out. I'm gluten-free, and GF bread is so expensive, I didn't want to use any for this so I took my chances. It came out fine. I'll definitely be making this again.

        I forgot to add that there were no leftovers. My 17yo finished every bit of the meatloaf the night I made it. He's a hearty eater, but if he doesn't like something, he won't eat extra helpings.
