    ⏲️ Time needed

    If you follow our Secrets of a Busy Cook and have ground beef, onions, and bell peppers already prepared, this recipe just takes about 5 minutes to mix together, then 35 minutes to cook.

    If you need to cook the ground beef and chop and cook the vegetables, allow about 20 extra minutes.

    🥘 Ingredients

    • 1 egg
    • cornmeal
    • baking soda
    • cream-style corn
    • milk
    • oil
    • ground beef
    • chopped onion
    • chopped green pepper
    • salt
    • chili powder
    • grated cheddar cheese
    • taco sauce (optional)

    I often add a half can of corn to my cornbread for a punch of flavor and texture, and we use a similar idea by adding creamed corn to the topping made from cornbread batter.

    🍲 Vegetarian option

    Beyond Beef Ground is my favorite substitution for ground beef due to its superior texture and flavor. Cornbread Burger Bake can be made vegetarian by simply substituting the Beyond Beef Ground for the beef.

    📋 Instructions

    If you don't have cooked ingredients ready to use, start by adding chopped onion and green pepper to a skillet with chili powder. Add the ground beef and salt and cook until beef is cooked through and vegetables are tender.

    In a 2 quart casserole dish, layer the ground beef, then the cheese.

    Top with the cornbread batter and bake for about 30 minutes or until done.

    💭 Tips

    This is the kind of recipe that shows just how helpful prepared ingredients can be. The Secrets of a Busy Cook are all about doing the same amount of work in less time. By bulk cooking ground beef, onions, and bell peppers when you bring them home from the store, you not only save prep time when you are making dinner, but you save time over all.

    It takes less time to cook 5 pounds of ground beef once than to cook 1 pound of ground beef five times. By having the ingredients already prepared and frozen, you save about 20 minutes in prep time for this recipe (not to mention the extra pan that you don't have to clean).

    Ingredients
      

    • 1 egg, beaten
    • ½ c. cornmeal
    • 1 tsp. baking soda
    • 8.25 oz. can cream-style corn, or approx. 1 cup
    • ½ c. milk
    • 1 Tbsp. oil
    • 1 lb. ground beef
    • ½ c. chopped onion
    • ¼ c. chopped green pepper
    • 1 tsp. chili powder
    • 1 tsp. salt
    • 1 c. shredded cheddar cheese
    • taco sauce, optional
    Prevent your screen from going dark

    Instructions

    • In a bowl, mix the egg, cornmeal, baking soda, corn, milk and oil; mixture will be thin. Set aside.
    • Cook the ground beef, onion, green pepper and chili powder in a skillet; drain off any fat.
    • Place the meat mixture in a greased 2 quart baking dish. Cover with the grated cheese.
    • Pour the cornmeal mixture over the top of everything, spreading evenly.
    • Bake at 375°F for 30 to 35 minutes or until cornmeal topping is set.
    • Serve with taco sauce if desired.

    🥗 Side dishes

    Cornbread Burger Bake goes well with hearty vegetables like roasted broccoli, Brussels sprouts, or cabbage. One of my favorite sides is slow simmered green beans in butter, and I think they are a good side for this dish.
