Mashed Potatoes (Party Potatoes)
These rich and creamy party potatoes are an easy holiday side dish.
Ingredients
- 5 pounds Yukon Gold potatoes
- 6 tablespoons butter
- 2 cups sour cream
- ยฝ to 1 cup milk as preferred for consistency
- Adobo seasoning to taste
- 2 tablespoons butter, for garnish
Instructions
- Wash and quarter 5 pounds Yukon Gold potatoes. You do not need to peel them but can if you prefer.
- Boil potatoes in enough water to cover potatoes until potatoes are tender (they should start to break apart when poked with a fork). Drain water and return potatoes to the pot.
- Add 6 tablespoons butter, 2 cups sour cream, and Adobo seasoning to taste.
- Mash with a potato masher or large fork, adding ยฝ to 1 cup milk as preferred for consistency. If you like very creamy mashed potatoes you can use a mixer to get a good whipped consistency. If you like lumpy potatoes, use a fork or potato masher to maintain a more solid consistency.
- Place potatoes in a serving dish if desired.
- Top with 2 tablespoons butter before serving.
