Creamy Tomato Basil Soup

Served with grilled cheese sandwiches, this Creamy Tomato Basil Soup makes a filling and flavorful meal anytime of the year.

Soup with a sandwich is often relegated to lunch fare, but they make an easy and delicious supper when you are short on time. I'm a big fan of sandwich makers to make a quick meal, and I used mine to make grilled cheese sandwiches to serve with this creamy soup.

This easy soup is ready in only 15 minutes!

๐Ÿฅ˜ Ingredients

  • canned crushed tomatoes
  • chicken or vegetable broth
  • chopped fresh basil
  • sugar
  • salt and pepper
  • half and half
  • shredded Parmesan cheese
  • croutons

๐Ÿ“‹ Instructions

Combine the tomatoes and broth in a sauce pan over medium heat. Stir in basil and sugar and continue heating for 5 minutes, stirring occasionally. Reduce heat; stir in the half and half. Cook, stirring regularly, until soup is hot. Season to taste with salt and pepper, and serve garnished with Parmesan cheese and croutons.

๐Ÿ’ญ Tips

If you'd like a less creamy soup (as well as fewer calories), you can use less half and half or omit it completely.

Making sandwiches to go with your soup? Consider a sandwich maker. When I first heard of standalone sandwich makers, I was skepticalโ€”I mean how many countertop appliances does a cook really need? When our waffle maker died, however, I found myself looking at a multi-purpose grill with interchangeable plates to make waffles, paninis, quesadillas, and more.

Since there is no flipping with a sandwich press, it allows me to pile on all of the ingredients I want without worrying that they will fall out. I used the sandwich press to make these yummy grilled cheese sandwiches pictured with the creamy tomato basil soup.
