What you need to make Philly Cheesesteak Sliders

Labeled ingredients on a counter: shaved beef, provolone cheese slices, sliced yellow onion, sliced green bell pepper, onion soup mix, garlic powder, salt, pepper, Worcestershire sauce, butter, and Hawaiian rolls.
  • Shaved steak. Look in the refrigerated beef section for packages of fresh shaved steak. Avoid frozen sliced steaks if you can. Leftover steak or roast beef also works.
  • Provolone cheese slices. I love the flavor and melt. If you prefer American, use white or yellow American. Some folks swear by Cheez Whiz, so use what you love.
  • Yellow onion and green bell pepper.
  • Onion soup mix. Generic is fine.
  • Garlic powder, salt, and black pepper.
  • Worcestershire sauce. Lea & Perrins is my favorite, and a bottle lasts a good long while so the extra cost is worth it.
  • Butter. Real butter for the best consistency and flavor.
  • Sweet Hawaiian rolls. Any slider buns work. King's now has a jalapeño version that would be great here.

How to make Philly Cheesesteak Sliders

Composite image: 1-sliced onion and green bell pepper in a pan with melted butter; 2- same after sautéing until starting to brown; 3 same after adding shaved beef steak; 4- same after beef is cooked through.

Slice the onion and pepper and sauté in cooking oil (1 & 2). Stir in the shaved steak, Worcestershire, garlic powder, salt, and pepper. Break it apart as it cooks so it does not clump (3). Cook until no longer pink, then remove from heat (4).

Composite image: 5- cooked beef, onions, and peppers on top of Hawaiian rolls cut open crosswise; 6- same after adding provolone cheese slices; 7- bowl with melted butter and onion soup mix; 8- spooning butter mixture on top of tops of rolls.

Keeping the rolls attached as a sheet, slice them in half horizontally. Place the bottoms on a parchment lined baking sheet. Spread with the meat, sautéed onions, and peppers evenly over the bottom half of the rolls (5). Arrange slices of provolone cheese on top of the meat (6) and top with the roll lids. Melt butter and stir in onion soup mix (7). Brush or spoon the mixture over the tops of the rolls (8).

Bake at 400ºF for 17-20 minutes until tops are starting to brown and cheese is melted (9 & 10). Garnish with fresh parsley you like.

✨ Pro Tip for Easy Cleanup ✨

Line the sheet pan with parchment before assembling. When the sliders are gone, toss the parchment and you are basically done.

Make it your own

  • Add a little heat and sweet with pickled cherry peppers or pepper relish.
  • Try different rolls, like King's jalapeño slider rolls, or your favorite slider buns.
  • Use what you have. Leftover steak or roast beef and any color bell pepper work.
  • Swap the cheese for Swiss, Pepper Jack, or American if that is your thing.
  • Mushroom fan? Sauté a cup of sliced mushrooms with the peppers and onions.

Prep ahead

Short term, a few hours: Assemble through brushing the butter mixture on top. Cover with foil and refrigerate. Add a few extra minutes of bake time.

Longer term, more than a few hours:

  • Cook and cool the onions, peppers, and beef. Store in an airtight, microwave safe container in the refrigerator.
  • Melt butter, stir in onion soup mix, and refrigerate in a spill proof container.
  • When ready to bake, slice the rolls, reheat the meat and peppers, assemble with cheese, rewarm the butter mixture, brush the tops, and bake as directed.

Storage and freezing

Fridge: Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freezer: Freeze in an airtight container for up to 4 months. Thaw in the refrigerator, then reheat wrapped in foil.

Instructions

  • Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  • Slice 1 green pepper and 1 yellow onion into thin strips.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add in the sliced onions and green peppers. Cook, stirring occasionally, until the vegetables are soft and slightly caramelized.
  • Add 14 ounces shaved beef steak to the pan along with 1 tablespoon Worcestershire sauce, ½ teaspoon garlic powder, 1 teaspoon salt and ½ teaspoon ground pepper. Break the meat apart with two forks as it cooks to keep it from clumping. Cook until no longer pink, then remove from heat.

  • Melt 4 tablespoons butter.
  • Evenly spread the steak and veggie mixture over the bottom buns. Lay 8 slices provolone cheese over the top of the steak, then add the roll tops.
  • In a small bowl, stir the melted butter together with 1 tablespoon onion soup mix. Brush or spoon this mixture generously over the tops of the buns.
  • Bake for 17-20 minutes, until the tops are golden brown and the cheese is melted.
  • Sprinkle with chopped fresh parsley if desired. Cut to separate the sliders, and serve warm.

Notes

Baking on parchment paper makes cleanup a snap, but you can do without if you don't have any.
