Place 1 pound cooked ground beef and onion in a soup pot and cook until beef is reheated and onion is tender.
Add 3 cups water, 32 ounces diced stewed tomatoes (undrained), 32 ounces light kidney beans (undrained), 16 ounces tomato sauce, and 2 tablespoons taco seasoning mix. Mix well and simmer, covered, until hot.
Add cheese, sour cream, avocado, and tortilla chips to soup if desired. Add jalapenos or salsa for a spicier soup.
