Chicken Divan

Oven-baked Chicken Divan with Curry is an easy way repurpose leftover chicken (or turkey) and broccoli.

Chicken Divan originated at the Divan Parisienne Restaurant—located in the Chatham Hotel in New York City—in the early twentieth century. The recipe was adapted to use canned soup in the 50s.

Ingredients

-Cooked chicken -Steamed broccoli -Stuffing mix -Cream of chicken soup

-Mayonnaise -Curry powder -Lemon juice -Cheddar cheese

Combine cream of chicken soup with cheddar cheese in a saucepan and heat until cheese is melted. Add mayonnaise, lemon juice, and curry powder. Mix well.

Step 1

When the sauce is ready, start layering the casserole by placing the broccoli in a 9x12 baking dish. Layer cooked chicken on top of broccoli.

Step 2

Spread sauce of cream of chicken soup, mayo, curry powder, lemon juice, and cheese on top of chicken. Sprinkle stuffing mix evenly over top of soup mixture.

Step 3

Bake the Chicken Divan with Curry at 350ºF for about 30 minutes, or until heated through and stuffing is browning. Serve immediately.
