If you keep browned ground beef and sautéed onions and peppers in your freezer, this is a quick Italian meal to make for nights when you have little time to prepare dinner. It is delicious served with a salad and garlic bread.
Popover Pizza Pie
- 1-½ lbs. ground beef, browned
- 1 onion, chopped
- 1 green pepper, chopped
- salt and freshly ground pepper to taste
- 3 garlic cloves , minced
- Dash of Tabasco
- 15 oz. can tomato sauce
- 1 cup milk
- 1 Tbsp olive oil
- 2 eggs
- 1 cup flour
- ¼ teaspoons salt
- 2 cups shredded mozzarella cheese
- ½ cup shredded Parmesan cheese
Preheat oven to 400°F. In an oven-proof skillet, sauté the onion and green pepper until translucent. Add the cooked ground beef and season with salt and pepper to taste. Add garlic, Tabasco, and tomato sauce and mix well. In a medium bowl, mix milk, oil, and eggs. Beat for 1 minute and then add flour, beating for 2 additional minutes or until smooth. Sprinkle the mozzarella cheese over the meat mixture in the oven-proof skillet, then pour the egg and milk mixture evenly over the cheese. Sprinkle with Parmesan cheese. Bake for 25-30 minutes or until batter is puffed up and lightly browned. Serve immediately.
